Categories: Breadmaker Fruit
Yield: 12 Servings

POSTED BY N.SAAVEDRA/NOODLE
1/3cOrange juice
1cWater
1/2tsOrange peel, dried grated
2tbHoney
2tbVegetable oil or applesauce
1cGranola
2 1/2cBread flour
1/2cOat flour *
1/2cWhole wheat flour
1tsSalt
4tbDried buttermilk powder
1tbYeast
1/2cDried cranberries
1/2cWalnuts (optional)
1 1/4tbDough enhancer (optional)

Place all the ingredients except the cranberries and walnuts in the machine, program for Raisin bread, and press start. When beeper sounds at the end of the last knead, add the cranberries and walnuts.

You may substitute any dried fruit for the cranberries, such as cherries, blueberries, apples, pears, peaches, apricots, figs, or prunes.

* To make oat flour, use regular or instant oats and pulverize into a powder using your food processor or blender, then remeasure.

Norma's Notes: A tasty loaf of bread, great for gifts!

As I do not use oils in my bread (nor did I have orange oil!), I substituted the dried orange peel. If you use fresh, just double the amount used. Due to the whole wheat and oat flour, I used the dough enhancer to lighten the "density" of the loaf.
